Vegan Banana Cupcakes
Make this Monster Vegan Banana Cupcakes so easy to make and delicious! Decorate them with colored frosting and you will have some fun making them!
Servings: 12 Cupcakes
Ingredients
Vegan Cupcakes
- 1 Cup Vegan butter Wiped vegan butter
- 2/3 Cups Sugar
- 4 Pz Banana Ripe
- 2 Tbsp Maple syrup
- 1 Tbsp Vanilla extract
- 2 Cups Self-rising flour
- 1/2 Tsp Baking powder
- 1/2 Tsp Bicarbonate of soda
- 1/2 Tsp Salt
Vegan Frosting
- 4 Cups Confectionary sugar 500 Gr
- 1 1/4 Cups Vegan Butter 290 Gr
- 1/4 Tsp Salt
- 1 Tbsp Vanilla extract
- 1-2 Tbsp Plant based creamer We have Coconut evaporated milk and use just 1/2 to 1 Tbsp to begin and use the rest if you need it
Instructions
Vegan Cupcakes
- Pre heat the oven 350ºF / 180ºCMix the cup of butter with the sugar. Use a mixer.Add the ripe banana smashed, maple syrup and the vanilla into the mix. In a separate bowl combine all the dry ingredients and addthem to the wet ingredients slowly with a slow in a wrapping movement. Make sure you set your cupcake holders on the molds. You can add chocolate chips. Pour the batter in to themolds.Get them in to the oven for about 25-30 min or until atoothpick comes out of the cupcakes clean.Let them cool before you frost them.
Vegan Frosting
- With a mixer start by softening the butter, add the vanillaextract, salt and then the sugar slowly until the end add one spoon of thevegan creamer and check consistency. Start off with the slow speed and gradually increase speeduntil your frosting is thick and smooth. Add the remaining vegan creamer ifneeded.Change the color with food coloring! Separate the frostingin different bowls and mix well with food coloring. Frost the cooled cakes and start decorating… have fun makingdelicious monsters.
